Windows is alright if its already there and I would prefer it much more than a Unix distro, Im a Windozer (aswell a helper of the php windows dev team) so thats what I prefer. I however think the server owner should be the one to decide what to go for.
When we do this project it doesn't matter if we're using Windows or not as it would be stupid to use system specific features as our goal (is as far I would say) is to make the application cross platform aswell, so to me the OS doesn't matter really only if I was one to go on remote control.
Codefreek, sure if you like. I just don't have a clue of the swedish pms your sending me (I actually do understand some of it, but I would prefer english) =)

I'm also asking because I use this server personally, but just for hosting files across both my computers.
If linux wont let me do what I want to do with it. i.e map network drives, remote desktop connection or ssh; sorry to say, but i'm not up to put on a new os and find out that it cant do anything but sit there and be a http server.

I was under the impression redhat wasnt free, meh. Debain is prolly the best imo, I use it all the time and our servers run it at work (apart from one redhat one i think) if your not too sure about setting debian up (can be alittle daunting) give ubuntu a try, i have no idea how good it is as a server but its a debain build so its half-way there and if your not sure how to compile apache+php and mysql from source then apt-get will install a version for you (i forget which though, php 5.2 +) but that said its only for testing purposes anyway it doesnt need to have a great OS.

FreeBSD isnt linux, although it too has its roots in unix.

Edit: a small question, how is windows for things like mod_rewrite and such? my last host seemed incapable of enabling it for me (windows host).

Apache can only handle mod_rewrite. I'm using IIS, but I can install Apache if needed.

Almost forgot to mention, but to get ftp. You are going to need hamachi. The FTP Ports on my router are already being used by another computer. So with hamachi you can get to the FTP port ont hat computer.
Port 80 Links to that computer, so its all setup to work with the internet. Just can't access it with FTP.

Depends on what you mean by usability, and even then it can still be a very subjective response.
When it comes to appliance usability (your average home computer, with minimal needs, processing, browsing, some games and graphics) Windows still has the holeshot on Linux. However, when it comes to running secure, running stable, and especially running anything that requires reliability (web servers, local network servers, any kind of workhorse that needs to be there when you want it, any time of the day) Linux/Unix based machines blow Windows completely out of the water without even a rearview mirror check.
If you've never used an older PC, in particular DOS, Linux is going to be a bit of a learning curve for you. I don't know what's all out there for it now, but when I was heavily into it, there was quite a few options including KDE, Gnome, Enlightenment and what not which created some graphically intensive and stylish interfaces, but your true power in Linux still comes from it's command line approach. I can tell you everything that's happening on a Linux box, and I mean everything, and secure it to the point where only a very good hacker will get in, with very little effort. As for Windows, the only thing I can tell you it's doing half the time is smoking a lil glass pipe.
I've never had a problem running Apache or most other open source products on a Windows box, but once again in favour of Linux, I can't shut everything else off with the exception of Apache on a Windows box. No matter what you have resources going elsewhere. Linux, you load in the kernel, you load in bash, you load in apache, nuff said.
