Then joining an open source project is not likely your best option. The reason for this is that open source projects are often in continuing productions, this means that new things aren't being developed as fast and focuses are on bugs and errors. If you want to see the lifecycle of a project, you need to be there from beginning to end. If you join a beginning project it could be a long time until you see it concluded.
My advice to you is to take on small client work and just build your way up. It is known that diamonds do not come for low wages (those who think that do not know what a diamond looks like) so do not worry about things not being top quality. ,
