Anyone have any suggestions on doing pop3 with php? I'm interested in processing incoming mail one message at a time. Any there any "how-to's" out there or a great class function available somewhere?

You could try having a peak at the imap_open function on PHP.net. That should contain some useful information for you regarding POP3 in PHP.

Oh wow.. thats very useful! You might considered adding some things in a new blog though, maybe how to delete the messages you have already read perhaps?

I have to say that this is really helpful. I'm going to start playing with this tonight.

That's a good idea - I'm in the middle of writing a series about getting reports from Google Analytics at the moment and I wrote that one as a supporting post, along with a whole bunch of others. Once I get the Analytics stuff done I'll write more about the other imap functions. I'm also interested in looking at the Zend Framework's mail functions to see how they work too.
