Default Catering from quotes in text input

This is probably a pretty obvious question but how do I cater for quotes in text input. Cant find anything on google searches. Essentially if someone enters a name such as o'neill this causes me problems. How do i tell the php code not to treat the quota or comma as php language so I can store it on a myswl database then display it again in the format it was entered i.e. o'neill?
