Help How can i get past protocol analysis?

I really don't know much about packets and protocols, but I'm hosting a proxy over my WAN ip using 3proxy. However, the other location that I want to connect from has a protocol analysis system to make sure that the packets sent through the particular protocol are actually as they should be (I've tried listening on port 80[http] and 21[ftp]).

And so my question is, How can I fool this protocol analyzer without making the data unreadable?

If I cant do that then is there some kind of common protocol that has very uncommon packets sent through it?
